A root cellar is a structure built underground or partially underground
and used to store vegetables, fruits, and nuts or other foods.
Function
Root cellars are for keeping food supplies at a low temperature and steady
humidity to keep from freezing during the winter and cool during the summer
months to prevent spoilage. Typically, a variety of vegetables are placed
in the root cellar in the autumn, after harvesting. A secondary use for the
root cellar is as a place in which to store home made alcoholic beverages.
Vegetables stored in the root cellar primarily consist of potatoes, turnip,
and carrot. Other food supplies placed in the root cellar over the winter
months include beets, onions preserves/jams, salt meat, salt turbot, and
salt herring. Winter squash keeps well in a cellar, too.
Separate cellars are occasionally seen for storing fruits, such as apples.
Water, bread, butter, milk, and cream are sometimes stored in the root
cellar also. In addition, items such as salad greens, fresh meat, and jam
pies are kept in the root cellar early in the day to keep cool until they
are needed for supper.
Construction
Common construction methods are:
1.Digging down into the ground and erecting a shed or house over the cellar
(access is via a trap door in the shed).
2.Digging into the side of a hill (easier to excavate and facilitates water
drainage).
3.Building a structure at ground level and piling rocks, earth, and/or sod
around and over it. This may be easier to build on rocky terrain where
excavation is difficult.
Most root cellars were built using stone, wood, mortar (cement), and sod.
Newer ones may be made of concrete with sod on top.

How to Make a Basement Root Cellar
Instructions
Root cellars have been around for centuries. Dark and cool root cellars were
essential food storage places for dozens of generations before refrigerators.
The root cellar is making a comeback among health conscious consumers concerned
about growing food safety issues.
1. Determine dampest section of your basement. Crops need high humidity. The area
where the sump pump is located is often the dampest. If possible, select a corner
area for your basement root cellar as this offers the maximum coolness while
requiring the minimum construction.
2. Create a ventilation system that allows cold outside air to enter. Select a
section of the basement that includes a window. The window is essential to the
cooling process as cold fresh air preserves the freshness of stored items.
Remove the glass from the window.
3. Cut a piece of plywood to fit the window and cut two 3-inch diameter holes in
the plywood. Cut the two pieces of pipe to fit through the holes while leaving
plenty of room for adjusting the piping. Install a blast valve in each pipe, or
another device for sealing off the pipes to prevent temperatures falling below
freezing. Place the exhaust and intake pipes as far apart as possible.
4. Mark off the area for your root cellar using a large felt tip marker. Build
the walls from a rot resistant material, such as 2-by-4's of cedar. Frame in the
root cellar.
5. Use a plastic composite material for the floor since basement floors are damp.
Add gypsum board to the interior and exterior. Use fiberglass insulation and foam
to insulate the walls and make them as air tight as possible.
6. Add shelving to the root cellar for storage. The shelves should be spaced to
allow air to flow between them. Lower shelves will be the coolest and upper
shelves will be the warmest. Wire baskets are a good way to organize items stored
in the cellar.
7. Hang a door. A root cellar does not need a fancy door. A piece of plywood can
be used for the door and can be hung directly from the wall studs. The door could
be built in two-sections to allow for quick removal of small items without letting
cool air escape.

SPRING HOUSE
A spring house, or springhouse, is a small building used for
refrigeration once commonly found in rural areas before the
advent of electric refrigeration. It is usually a one-room
building constructed over the source of a spring. The water
of the spring maintains a constant cool temperature inside
the spring house throughout the year. In settings where no
natural spring is available, another source of natural
running water, such as a small creek or diverted portion of
a larger creek, may be used. The main use of a spring house
is for the long-term storage of food that would otherwise
spoil, such as meat, fruit or dairy products.
